I have ordered and used this brand several times before, but this particular Coppa was terrible.  The flavor was good, but the quality of the pork they used was so gristly and tough, I couldn't use it in anything I wanted to prepare.  My family eats a lot of anti pasta and homemade pizzas, and none of us could handle the excessive amount of hard sinew and gristle in this one.  I ended up throwing it out.  I haven't written a review until now because I had forgotten about it, but it is time to order some more cured products, and that prompted me to write this now.  Again, I've ordered from these people before and was satisfied, but this particular one was so bad I hesitate to order from them again.

My wife is from Verona, Italy and is a chef in here own right and acquiring certain Italian food products is sometimes difficult.  She had repeatedly commented that this coppa is identical to the Italian version.  We are extremely satisfied with this product.

Wonderful flavor and texture.  Lacks traditional casing and netting, but this is not an issue.  The product is the same as it has been for many years.
