I always buy citrus with the best intentions to use the juice in cooking, but the bags of limes and lemons get forgotten in the back of the produce drawer and the next time I think to use them they're bright green balls of mold. True _____ products are a great way to get fresh citrus flavor in drinks and in cooking, and are economical for me because they reduce wasted fruit. I haven't had the chance to try it in too many things, but I imagine it would be very good in guacamole, as part of a rub or seasoning for meats, and in salad dressings (and in anything else where you might want a tart lime flavor.) I did make a surprisingly good sauce with it: I steamed cauliflower until it was very tender, then put it in the blender with a little water, a little mild cheese for creaminess, some arugula, a lot of garlic, pepper, salt, and True Lime. It made a very creamy sauce with a kind of "island" or tropical flavor from the lime that was very, very good on pasta with some grilled chicken thigh chopped up.

## Questions & Answers

**Q: How much sugar/calrories is actually in this product?  Malodextrin (corn sugar) is the 2nd ingredient, so it must have some - they just round-down.**
A: Label says 0g sugar and <1g for total carbs for a serving size of 0.7 grams.  There are about 0.8 g in 1/4 tsp so a serving size is a bit less than that.  With such a small serving size, the sugars would not really be significant. There is an equivalency chart that says 1/2 teaspoon of the True Lime powder = 1 Tablespoon of lime juice.  The equivalency chart does go up to 4 tsp of powder = 1/2 cup of lime juice (and they suggest adding water).  I doubt I would ever use the powder in place of a 1/2 cup need for lime juice.  I like the powder for adding a splash of lime flavor so typically use 1/4 teaspoon or less.  I don't consider the sugars to be an issue since I use this for smaller needs, but if you are using teaspoons of the product, it might bump up to 1 gram of sugar eventually.  I love this product because I get to add lime flavor to dishes that I wouldn't normally do since I don't keep lime juice on hand.  Just added it to some fruit salad and a blueberry pie recently.  Great for chicken too (I also recommend the Lime, Garlic & Cilantro from True Lime for meat dishes).

**Q: How long does it last once it’s been opened?**
A: I keeps freshness a long time because it is powdered and I have never had it go bad ever.

**Q: Is this the same (or similar) flavor they put on lime tortilla chips that you can buy at the store?**
A: This tastes extremely similar to real lime. When I make homemade tortilla chips/strips I mix this with a little salt and sprinkle it over the hot chips/strips. I think this has a better & stronger lime flavor than the store bought stuff.

**Q: This is confusing- some have sweetener, some are totally natural, etc. The more natural the better! Do they have berry ones?**
A: They do have strawberry, raspberry, and peach lemonades, and black cherry limeade,  but no berries on their own as far as I know. The lemonades and limeade are sweetened mainly with Stevia.

True Lime is crystallized lime juice. It contains citric acid, malic acid, lime oil, lime juice, ascorbic acid (vitamin C), and maltodextrin. It has no calories and a serving (.7 grams) has 25% RDA of vitamin C. The label says there are 110 servings per container, so the price per serving is pretty modest. I've bought the True Lime packets before, but the shaker jar is much more convenient for cooking. If you live in an area with high humidity you may want to put this in the refrigerator to make sure it doesn't clump. It is not a big deal with the packets because they are foil, but the shaker lid is not environmentally sealed, so beware that humidity could be a problem. You can use True Lime in anything that you would add fresh lime juice to. I have a rice cooker and I put True Lime and cilantro in with my rice for a nice side dish. I've also used it with ginger on baked chicken filets. The True Lime is pretty potent, so you don't need a lot of it in your recipes. Go easy on adding it to recipes and add more at the table if desired. This can be sprinkled on just like salt, and you can add it to tea, water, yogurt, or anything you want. The True Lime folks have come out with some other variations, but this particular product is just straight-up lime. I think this could be a good salt substitute for anyone who's watching their sodium intake. It adds enough flavor that you could reduce or eliminate adding salt to foods and still have something tasty. If you like lime, there is nothing to not like here.
