Since 1850, Emile Henry has produced in France a large range of high quality ceramic cooking utensils. our products are made from natural materials and have been designed and manufactured in France, in Southern Burgundy. Controlled production, without waste, is part of our daily commitment: the CO2 expelled from our workshops is particularly low thanks to our modern firing techniques that require less energy. The waste, in general, is recycled and the water used in production is filtered and used again in the production process. Our dishes have always been produced in France, in Marcigny in the South of Burgundy: it is a tradition and savoir-faire which has been handed down from generation to generation. Each Worker prepares his moulds, produces his dishes and signs each one with his Initials. We are proud of this responsibility entrusted to each of our workers, which is a pledge of quality for all our production.

Review: Happy with purchase - Excellent bread baker for sourdough - fits into Breville smart oven air fryer pro. Was worried about damage during shipment and cracking but it arrived very securely packaged and quickly. The EH website states: "Never preheat your ceramic baking dish dry, always add cooking oil or some type of liquid to the dish. (This does not apply to the Flame products and bread bakers.)" Though the bread baker is the exception, to stay on the safe side I did not preheat the baker as I normally would a dutch oven. Tried a baking in preheated oven with cold fermented dough and room temp baker and the bread turned out nicely - 50 min total at 465F - took the lid off to brown the top towards the end for the last 15 min.

The only difficulty is the lack of a knob on the top, to easily remove the lid. There are small handles on the ends of the lid but with mitts on it is tricky. Otherwise I love the baker! My first bake was a chocolate cherry sour dough.

**Q: Is the inside of the top glazed like the inside bottom? If not, how easy is it to clean the inside top if the bread sticks to it?**
A: The bottom inside is glazed and very easy to clean

**Q: My lid doesn't close tight, and rocks when on. Is that expected?**
A: The lid will perhaps wiggle just a tad and not a close sealed fit. I have two of these for baking bread. If your baker gives you concern, call Emile Henry (in New Castle, Delaware) and voice your concern, the customer service is good and will surely help you.  My only observation is that the end handles could stand an improvement for facilitating removal of the very hot lid midway in the baking cycle.

**Q: Is this ptfe and pfoa free?**
A: Yes it is PTFE and PFOA free as it is ceramic. No plastic or non-stick coatings used.

**Q: Is there a trick to removing the bread from this pan? Mine is sticks**
A: I brush the bottom interior with coconut oil then dust with corn meal.  Eliminates the sticking. Also let it cool to warm-slighty hot before trying to remove.
