Review: Very good quality, awesome taste - I use this flour for my homemade bread. The important part - it is not contaminated with glyphosates / Round-up as most North American flours, even organic ones, are. This flour by itself however is not intended for leavened breads; typically used for flatbreads. If you try to use only this flour alone, the bread may not rise propetly. The trick is to mix it, say, 50/50, with strong bread flour, I usually take either French T65, or Italian Tipo 1, and this flour brings a very nice whole wheat taste to my bread. On the photo: the bread is 50/50 this flour mixed with Italian Caputo bread flour, bakers weight 500 g flour incl starter; made with my own sourdough starter, 75% hydration, cold-fermented overnight in the fridge, and baked at 444 F for 40 min in dutch oven with lid, then remove the lid, drop to 410 F and 20 more minutes.
