Fabulous substitute for European chef's knife
I like the knife I purchased for myself that I subsequently purchase 4 more as gifts to special people. Great size and weight, good in the hand. FYI, I am a woman with large but arthritic hands. It cuts through raw carrots and other hard vegetables, like it is cutting through butter. Also does an excellent job with more delicate vegetables and fruits. Surprisingly, it also does a good job slicing roasts. If I were starting a kitchen, I think I could get by for a while with just this knife and a petty knife for cutting small things. I grew up watching Julia Childs and bought myself the Sabatier carbon steel knives she recommended. They were pretty good, but the company that bought the Sabatier brand didn't carry on the quality. I tried a couple of Henkels stainless steel knives, but they were just OK; their discontinued Criodur knives a bit better. I am glad to learn that Henkels has acquired this brand, and is having the knives made in Japan in accordance with Japanese metallurgy standards.

This is simply a beautiful knife!
This knife is for fine work and precision cutting! Thin and scary sharp right out of the box. Knives made by Yaxell are always sharp out of the box. If you decide to buy a handmade Japanese knife, always make sure you purchase a sharpening service from the company you purchased it from , to ensure you get an extremely sharp knife. Otherwise, you may get surprised not in a good way even the knife is made from a famous blacksmith. If you know how to sharpen your knives, please disregard this ... at least that's been my experience Well balanced and the balance is at the choil. The handle is smaller than other knives of the same size, and depending on how you hold the knife, it may feel uncomfortable. With a pinch grip this is not a problem. It is a pleasure to use it. The finish is fantastic and .... This is simply a beautiful knife!

Liked it so much I bought two, gifted my brother the same knife
The SG2 Ensos are beautiful. I purchased the Enso HD 16 piece Knife Set - VG10 hammered steel. The only knife I felt the set missed was a larger version of that set’s 5.5” prep knife which is just a smaller Bunka. I also wanted to have at least one of the higher end SG2s. This 7” Bunka completes and compliments the 16 piece set to a 17 piece and has a home in the blocks extra slot. I like it so much, I then bought another and gifted it to my brother. Makes a great gift with a magnetic wood block.

Extremely sharp....at first.
This knife came out the box way past razor sharp. I accidentally cut my cats tail off pretending I was a samurai. But luckily I had also just purchased a foxtail butt plug, so he looks just like he used to except he meows alot more now. Blade has since lost a lot of sharpness but can still easily cut thin slices from tomatoes. Beautiful looking Blade as well.

Excellent Kitchen Knife
Sharp as a razor, and holds its edge well. I particularly like its flat belly for slicing.
