Take-out junkie no longer lost in the kitchen
After using this wonderful book for the last year I no longer open the fridge and then decide get take out. Not only does this book teach some tasty recipes, it also has a section on stocking a kitchen, and each section, for example: Grains, Beans, Pasta meals, has an intro that helps one become familiar with some cooking basics. I can now open the fridge and find something healthy and easy to whip up in the time it would otherwise take me to go pick up takeout or order pizza.With very few exceptions (another reviewer mentioned not liking Pad Thai and I have to agree) these recipes are stellar. I've probably tried at least half of them so far. Each time I've cooked a new recipe from this book my husband thought I was amazing. The ones he liked the best Tomato Ravioli Soup, Pasta with Garbanzo Beans (he calls it the different spaghetti), Polenta with Mushroom gravy, Falafel (I call it "veggie burgers"), Orange Rice and Black Bean Salad, and the Black Bean and Yam Quesadilla (which by the way he hates yams but loved that - go figure). Oh and he also LOVES the Indian Rice. I like the Honey Yogurt Dressing over a fruit salad.So even though I'm not vegetarian, because of this book most of the meals I cook are. Eating so many vegetables and unprocessed foods like this has been very healthy for us. My husband lost his little gut and I lost my baby weight.Oh yeah, and they really are affordable. I spend maybe $50 bucks a week for groceries for my husband and I when I cook from this book, and that feeds us breakfast lunch and dinner. I can't say enough good things about this cookbook. Very highly recommended.

This Cookbook stays Out on my Kitchen Counter!
I bought this little cookbook about a year ago for my daughter who is in law school. She likes to cook and trys to always eat healthy and mostly vegetarian. I hoped it would give her ideas to create interesting menus. It did. She loved everything in it and would call me and give me recipes she wanted me to try. I finally ordered one for myself. I use this book every day. I have 3 to feed for most meals so I just stretch the recipes a bit to compensate for the amounts I need -- its really easy.My recently divorced son was visiting for a few days and commented on how much he liked some of the dishes I fixed while he was here - so - I bought another Student's Vegetarian Cookbook for him.The recipes are very easy to prepare. It is easy to find the ingredients in most regular grocery stores and they don't take a lot of time. I can pop open the book and plan 3-4 days of meals and sandwiches and head for the grocery with my list. We are not vegan, but eat fish, eggs, milk, etc. We avoid all red meats, turkey, chicken so this book works great for us. I love the mountain high chocolate cake recipe. It is so easy and sooooo good. I made it once for a birthday party and doubled the recipe so it made two layers & filled it with ice cream and served it as an ice cream cake.I appreciate the hints and info on nutrition and shopping tips.

Buy this book!
I am not the type of student the author had in mind when writing this book. I am 41, a full time employee, as well as full time student. You can imagine how little time I have for meal planning and cooking, hence why I was attracted to this book. After reading the other reviews, I bought it and am so glad I did!I have tried three different dishes from this book and have had three screaming successes! The book delivers what it promises, quick, cheap, easy, DELICIOUS food. The Sunday Muffins were yummy (and didn't last very long). The veggie pizza from scratch was a pleasant and delicious stroll down memory lane (I went to a vegetarian high school where this was one of the most popular menu items). And today's repast, the falafel with tskiki sauce was absolutely fabulous.I had to deduct a star because I disagree with the advice that a regular serving teaspoon can be substituted for a measuring spoon. I personally have accumulated 3 different sizes of teaspoon and I doubt if any of them are actually a cooking teaspoon. Other than that, this is my favorite cookbook now!

Students! EASY Healthy Recipes! Seniors and Middle Agers too.
EVEN if you're NOT a Vegetarian. Also, this is a Great Gift for College Bound Vegetarians. Simple, easy-to-make, healthy recipes for one or two people; using good readily-available ingredients for good health. Now that your child is headed off to college, you may want to send them with this book along with your love. I am 68 and retired, trying to eat more in the vegetarian way and find the book very helpful for my altered and smaller appetite. Great combinations of foods for dishes that at first were not familiar to me, but are easy to cook up and serve. I also gifted my grown son with this book when he became a vegetarian, the only one in his family. He cooks often just for himself. When I visit his house, I can see he has been using it! I have seen "vegetarian" college students fill up on Rice a Roni and Twinkies. No way!

This is the most useful cookbook I own (and I own a lot of cookbooks!).
Over the years I've collected a lot of fancy cookbooks with gorgeous photos and wishful recipes that I'll never make. This is not one of them. There are no pictures; there is nothing exotic in this book. And that's why it's the one that stays out on my counter and is the most dog-eared and food splattered cookbook I own. I'm not a student, but I am a mom on a tight budget and tight on time, trying to feed a picky teen. This is my everyday go-to. My weeknight savior. Recipes are simple, straightforward, and require few ingredients that are inexpensive and easy to find in any grocery store. Since the book is intended for students, most recipes make just one or two servings, which I love because it's so much easier to double a recipe for my small family than to try to halve or third a recipe meant for more. This means less food waste and less money spent on ingredients. If you're new to cooking (vegetarian or not), or just on a tight budget, I highly recommend this economical, efficient little book.

Good book, but a tiny bit to simple.
I really like the book, their are very good tips in there. But for me half of the book is not useful.The recipes are very very simple, as they don't really add any new ideas for me. I found some great recipes but you really need to search between the rest to find them.The sections with sandwiches and pizzas for instance are not needed in my opinion, at least not so many as the basic idea is the same.Also the book lags a bit of a logical structure for me, and a index for ingredients would help as well (to find a recipe that fits with what you have in you fridge).overall, a good beginners-book.

Meh
I wouldn't eat half of the recipes offered here- most are really unhealthy and boooooooring. Just because we're students doesn't mean we don't like to eat great tasting food! We are a resourceful bunch and this book is an insult more than a help.

Student's Vegetarian Cookbook
I found this book very helpful and clear. I bought it for my son for basic recipes and my own notes to be added to. It filled my expectations. Very good.
