This is a paste, and does have to be refrigerated after opening.

I works in any dish. Just start with a small amount (read the directions), then at the end adjust the flavor and add more to the hot product

Gluten is a wheat product. There is no reason for fish base to have any wheat or wheat products in it. Contact the company if you require further information.

You are right that it says a pack of 6 but I only received 1 when I ordered this item. I did not pursue the issue however.
