Q: what temperature is rack rated at?

I do not believe there is a temperature rating. Are planning to put in in an oven? It nicely handles hot pan out of the oven.

Q: Will this hold a 2/3 pan sheet?

Yes. Holds full size sheet pan or two 1/2 size pans on each shelf.

Q: How many pounds does it hold?

Have not calculated how many pounds the Gridmann Commercial Bakery Rack holds. However, the Rack moves effortlessly with about 2/3 full of cookies and includes several pans of cookie cutters and misc. supplies.

Q: Is there something to stop the trays from accidentally being pushed off the other side?

This is open from both ends so trays can be inserted from either side which is great for the half sheet pans. It would take some force to push a tray through enough to fall out. I would think someone would have to try to push a tray off the other side. I can’t imagine it would happen accidentally.
