Great book to buy and to keep.
This is one of the best books I have ever bought.There are beautiful/helpful pictures that come with every recipe. Book is also well- organized.

Great step-by-step guide!
I absolutely love this book. The recipes are rated by difficulty and they all have step-by-step instructions and pictures, so you can easily see if it’s a recipe you can make. The recipes sometimes call for ingredients that are hard to find, but I’ve had good results with some substitutions. The ingredients are measured using the metric system, which can be annoying, but if you follow it exactly you’ll have better results.

Good solid reference text
I wanted to have an authoritative source book for the classics of French pastry, with detailed information on methods to insure successful results, not something just inspirational/aspirational with pretty photos for the coffee table. This book almost meets those expectations. It’s a good starting off point. What it lacks is trouble shooting tips if things don’t turn out as they should, ie. why is my puff pastry deflating. There are ingredients in the recipes that may be difficult but not necessary impossible to find (ie. gelatin sheets). This book is best thought of as reference material for an actual class with demonstrations. The recipes mostly consist of gateaux (cake) with variations for icing, glazes and fillings, tarts with variations on fillings, creams and fruit, and small deserts (macaron, chocolates). The ingredients are similar throughout for the pastry creams, doughs etc., very minimal ingredient lists as well (butter, cream, eggs, sugar...).

Great narrative and clear directions
If I can’t do really good pastry after reading this book I should be a pro. The pictures are very great and show you step-by-step how to do things and I need to see it and do it to learn it. There’s nothing I don’t like!

Just wonderful!!
The book came this week and it's really wonderful!! I like it so much, I'm going to give it to my daughter- in- law for Christmas. That's what I had in mind but I had it shipped to me to make sure it was what I wanted!! Perfect!! Beautiful photographs, step by step pastry instructions. I think she will really like it.

Great book for someone who love to make pastry. The book covers all main pastry recipes. It is very professional book. There are detailed photos that explain each recipe main step. You can learn key techniques that allow you to create vitrina cakes.You should buy thermometer in order to succeed in many recipe. The books cover many topics like: puff pastry, vitrina cakes, choux pastry, candies, chocolate,cake decorations, rollade, patifurs, cookies, decoration creams like ganach and glacés . The recipe are in metric version and cup size. You should buy scale to in order to succeed in the recipes.
