The schematic doesn't show a pull up/pull down resistor.  Is a resistor required?  If so, what ohm?

This depends upon your application.  The LED illumination for the symbol has a built-in dropping resistor, so you can connect the 12V directly across that with no problems.  If you're merely turning some piece of equipment on and off, then the switch simply acts as an interrupter - no pull-up required.  If you're feeding the input of a microprocessor, such as an Arduino, then you should connect one side of the switch to ground and the other to your input; in this case, you made need a pull-up to 5 volts (*not* 12V!), or you may be able to configure one internally to the micro (an Arduino permits this).  If needed, the value isn't critical - anywhere from 1k to 10k will be fine.  If you're feeding a PLC input of the "sinking" type, then you'll also need a pull-up, this time to 12 volts; a 4.7k is a good value for this.

Es opcional, puedes conectar la luz y que quede encendida todo el tiempo, o que prenda solo cuando presionas el boton o mantenerla apagada, en mi caso decidi no utilizar la luz y solo hice las conexiones normales, tierra, corriente y encendido

Installing in a bbq grill have 3 wires, hot /ground/device wire (lights) , help,i would like the led ring on at all times?

Is this for a battery powered igniter?  You could just connect the lamp wires to hot and ground, but it will drain your battery.  It also won't be very bright.  If it's a permanently installed grill with an AC powered igniter, as long as it's 12VDC or less across the hot wire you should be OK.  If it's direct to the 120VAC line, you'll have to add a transformer of some sort.  You may be able to find an old wall-wart from a broken piece of gear.  (Technically, a ballast resistor and diode would work, but I wouldn't recommend it.)
