Yes, very well--at least for simple slicing, which is all I do. I had the other OXO model previously and that was more complicated and much harder to clean. This one slips into the dishwasher (remove the cutting blade first) and that's it. The thickness adjustment is very easy and you can set it for almost any size you want.

what is the maximum thickness

I measure the "wavy depth" of the blade to be 1/8 inch. The lower surface will adjust down to 1/4 inch below that. However, that will not result in a waffle cut. Maximum thickness for waffle fries is pretty thin, too thin in my opinion. I contacted manufacturer and asked if a thicker cutting blade is available, apparently not. Swissmar Borner Powerline Waffle Cutter makes thicker cuts (good waffle fries) and is cheaper!

Can I cut harder vegetables like sweet potato’s and beets?

I needed to be out anyway, so stopped and purchased a sweet potato. All they had where small to medium potatoes. It worked fine for just straight slicing. The julienne cutter more or less shredded it. U did manage to get a few good waffle cut slices.

Can i slice cabbage or lettuce to have very thin slices

Yes. I have used this to make very thinly sliced cabbage for cole slaw. Be sure to cut the head into halves or quarters before slicing to make the process more manageable.
