Q: Just to double check, can the C500 be set to deliver one meal per day for 5 days?

Although it hase 5 x space to place food, you can only use 4 out the 5 as one is not covered. You also have a time set, where after setting the current time, you than would be able to set the 4 "opening -release" time of thr other 4 slot that are covered. Its an automatic roatating system. Your answer is yes and no. You can set delivery time by hour, not by date, usable i guess in a 24h rotation. Hope this helps.

The machine is very reliable. Ours is programmed to give 3 feeds per day. The smallest feed is about 10 grams. Very useful if you are going away for a couple of days and don't have anybody to come to feed your cat.

Q: If I set the times to 2 AM times and 2 PM times and I do this at 2pm will the PM ones open on that day or will the AM open on the following day first

It will open at whatever is the next time is in chronological order no matter what order they appear on the screen. Using your example if you turned it on at 1:59pm it would turn at 2pm that day, then 2am and 2pm the next day. If however you turned it on at 2:01pm it then wouldn't turn until 2am. If I'm going away for the weekend and want to feed my cat at 7am and 7pm, but I want to 'manually' feed my cat at 6pm on the Friday I just compensate for this by leaving the 1st compartment empty and putting my cat's breakfast in the 2nd compartment. The 1st would be opened at 7pm, the 2nd at 7am. Hope that makes sense!

Q: What happens if there is a power outage? Does it keep the settings and resume feeding on schedule afterwards or do you need to reset it manually?

The unit is battery powered, the batteries must be replaced within 60 seconds to avoid losing the current programme.
