Works great - just make sure your dough is not too slack!
I use this for proofing my artisan breads and it works great. It is very well constructed - sturdy and tightly-woven enough that it can even hold water for some time!Coat the inside of this with flour and place your dough ball into it. If your dough is very slack or wet it may stick to this no matter how much flour you have, but normally your dough ball will be tight after folding and should come right out. Depending on how "tight" my dough is (largely related to the protein content and folding) I'll invert this and either the dough will completely release or take about 5-10 seconds to slowly peel away without any ripping or tearing.I did place a _very_ wet dough into this after making sure it was well-floured and the results were not pretty. There was goopy dough in all the cracks and it started to harden. I had to let it soak and then spend a lot of time with a toothbrush cleaning it...won't do that again.If you want a topping on your bread, after coating this with flour add bran flakes or sesame seeds or whatever into the basket and then place the dough in it. As it proofs the topping will embed itself into the dough and give your finished bread a wonderful texture and taste.

I Have an Issue With the Liner
While I think that the liner is nice--after all you aren't supposed to wash the basket and it does come in contact with dough which more than likely contains oils, butter, eggs, etc. all of which spoil. But using the liner keeps the dough from truly having the indentations one is looking for when buying a Banneton. The recipe I used made two loaves, I only had one basket so I used a mixing bowl to shape the second loaf. The loaves ended up looking identical. I guess I'm just going to have to swallow down the "ick" factor and just do what is suggested--after use just let the basket dry and then brush it our thoroughly. But in that case, had I known about the lack of shaping, I could have just bought a basket and not paid more for the linen bag to hold it in when not in use and more importantly, not purchased the linen liner during the second rising and shaping of the dough.

Very pleased
I’m very pleased with the quality of both the banneton proofing basket and the sack. I find cleaning the banneton with a dry toothbrush, used only for this purpose, very helpful. If you bake your own artisan bread both products will come in very handy. The bread seems to stay fresh longer, but if it is going to take longer than say four days to eat the bread I would cut into slices and freeze it, so that you can enjoy it longer.

I researched various baskets and took a chance with this one and it was the right choice! Beautiful gift! Company is very attentive and responds back quickly to questions. This one is a winner!

Perfect
I love this. Was exactly what I expected, and even better quality. I have just begun using so I can not rate the durability but it looks extremely well built and I expect it will function accordingly. An excellent gift. I like the bag for storage and the liner completes the whole package.

Good Basket but Liner and Bag Smelled Musty
The basket seems good quality with a smooth surface without splinters. However, the liner and bag both had a bad musty smell like mildew that took 2 washings to get out. Because it came with the liner inside the basket, the basket also smelled slightly musty, but not bad enough to prevent use.

Excellent!
I have been happily impressed with banneton/brotform. I was quite unsure about ordering it because I suspected that quality on such an item could/would vary greatly.I have used it only with the liner..after I washed and dried it and coated well with flour. The fabric for the liner and the storage bag is a bit heavier me coarser than I had anticipated, but it works well and I have not had any dough stick to it at all....a very good thing.I use a large, round, flour tub/container and I store the basket and liner in it's bag and keep it I. The container. I like having the storage bag...certainly not necessary, but very nice to have. All in all I am very pleased with this purchase and expect that it will serve me well for a long time.
