Here is an example of a recipe to help get you started:GLUTEN FREE HOT DOG BUNSPan: Hot Dog Bun Pan Ingredients3/4 cup amaranth flour1/4 cup potato starch1/4 cup tapioca starch1/4 cup corn starch2 tablespoons flax seed meal2 teaspoons baking powder1 1/4 teaspoons xanthan gum1/2 teaspoon of salt2 eggs1/3 cup vegetable oil1/2 cup soy milkDirectionsPreheat oven to 400°F.Mix together the dry ingredients.Mix together the wet ingredients.Combine the wet with dry.Grease a USA Pan New England Hot Dog Bun Pan, then shape dough into hot dog bun shapes if it’s sticky, wet a spatula and your hands a bit to form them.Split the top of the buns with a sharp knifeBake for about 12-15 minutes, until they start to brown.

Q: I usually make 2 lbs of bread dough at a time. How much should go into this? 1 lb? 2 lb? Less? More?

The recipe that comes with the New England Hot Dog pan calls for 3 cups of flour which is average for 1-1/2 Lbs of dough and the yield is 10 buns. Easy and delicious.

Q: is this pan good for harvest/artisan free form breads? I am considering this pan rather than a covered clay baker.

I used it for home-made bread because i like my bread to look big and this pan is large and broad. I guess you could use it for free form breads too.

I make a honey oat in this pan that takes 4 1/2 C flour and 3/4 C oats. I hope this helps.
