Every bottle contains two pounds of heirloom seeds, lightly roasted, gently pressed and filtered. For a limited time, Stony Brook are offering oil pressed from silver edge squash seeds. Silver edge is a Native American heirloom that is grown for its large and tasty silver-edged seeds which are typically roasted for pepitas or used in pipian sauce - but they took it one step further and pressed the seeds to extract its delicious oil. The flavor of this special oil is reminiscent of shiitake mushroom, coffee and toasted grain. It's delicate flavor complements soft cheeses and is fabulous on roasted veggies. Drizzle over fish, pasta, hummus, vegetables such as green beans, salad greens, avocado, tomatoes... Smoke point is approximately 250 degrees F; avoid high heat.Silver Edge Squash Seed Oil is 100% non-GMO pure varietal oil made from the seeds of silver edge squash. Seeds are roasted and expeller pressed which means that the oil is mechanically pressed from the squash seed without added heat or chemicals. Unlike most other commercially available cooking oils (like canola and grapeseed), Stony Brook does not chemically alter the oil as part of the production process. This oil is high in mono- and polyunsaturated fats, low in saturated fat. Free from trans fat and cholesterol.
