An easy basic hollandaise sauce. Love it!
It’s perfect flavor for me and will cover at least 6-8 eggs for Eggs Benedict. It is a good basic sauce that comes up a nice thick consistency. My mom tends to prefer it more seasoned and adds pepper and a dash of paprika and salt. My sister prefers it more lemony and grates a little lemon zest in it for use with fish. We have a high wattage microwave so I heat it in a Pyrex measuring pitcher…we do 1 minute on half heat or 5, take out and stir, and then 1 minute on 7. I always have one of these in the cupboard, they are so useful!
