A beloved treat in their native Denmark, ebelskivers are light, puffy pancakes that can be filled with fruit, chocolate, jam or cheese and served for breakfast or as an hors d'oeuvre, dessert or light supper. The pancakes are easy to prepare at home using our popular pan made by Minnesota-based Nordic Ware.

Yum! Easy, too!
I love my "Ahbel-sky-ver"! ¡ !(pronunciation). I did not buy mine from this vendor, however, I have purchased from them in the past and been more than 'satisfied'. There must have been a 'blow-out' price on these somewhere because I bought mine locally @an outlet store BNIB w/a cookbook included for $4.99. I bought it on impulse and have to say, after having used mine a number of times, I would replace it even if I had to pay full price. (Of course, I wouldn't be caught dead paying retail for anything. Anything. Ever.)Normally I'm not one who buys "gimmick-y" items. Certainly, while I like to cook big family breakfasts, I am not looking for ways to complicate the process. Anyway, this pan can make an elegant dessert 'puff' as well as a simple "homemade" pancake. In fact, originally it was not purchased to make breakfast dishes. The determining factor was a picture on the box of some sort of muffin with cheese & jalapenos. As no instructions were provided on the box, I assumed it was a sort of stovetop muffin pan that allowed one to turn the item over while in the cooking process. Well, it is that, however, there's a bit more of a process, a 'skill' one acquires easily and, after only a few uses, proficiently. "Yeah, well how easily?" you ask? This description is coming from a woman for whom it took 3 years to master 'flipping' an egg or omelet with a swish of the wrist! There is a video demonstration on You Tube which perfectly shows one how to make an ebelskiver. I believe it is produced by The Solvang Restaurant, but if you enter 'Ebekskiver' into either You Tube or Google you will easily find the link to which I refer. By the way, an ebelskiver refers to the finished product; what you would be purchasing is an Ebelskiver pan.Lastly, if after checking out the pan, and my promise that anyone can do it, really, you decide to buy one I have a suggestion; although it is not offered here, I highly recommend paying a little more (at this writing about $2) and purchasing either a pan that includes the book, The Great Breakfast Book, or ordering the cookbook in addition to the pan. Every recipe contained in that book is awesome and helps in really learning what this pan can do! My pan is a Nordicware product as is the one offered here; a company who manufactures several items I use frequently in my kitchen. Finally, in my dissertation about this pan (!) I can tell you that 7 friends & family members bought their own pans, of them 2 were not happy with the quality of their pans, 1 thought hers was fine, but not very sturdy. The other 4 bought Nordicware and are happy with that choice. Of course if you're not going to use it there's no reason to buy it no matter what a 'bargain' it is! Bon Apetite! And have fun with it!
